5 Ideas for Using Your Zucchini Crop!

zucchini plantIts that time of the year again. The garden is happily producing but one vegetable is getting out of hand. We love it and hate it at the same time. Yes folks, I’m talking about Zucchini season. Better lock your cars or else they are liable to get filled up with your neighbors’ zucchinis!

If your garden is like mine, the zucchini plants are starting to take over. Everyday I am picking at least one and if I’m not paying attention I’ll end up with a behemoth! So what do you do with your giant crop of zucchinis (aside from filling your neighbors car?)

This is one of my favorite ways to use a zucchini. It makes two loaves.

Ingredients:

  • 3 Cups of Flour
  • 1 Tsp. of Salt
  • 1 Tsp. of Baking Soda
  • 1 Tsp. of Baking Powder
  • 3 Tsp. of Ground Cinnamon
  • 3 Eggs
  • 1 Cup Vegetable Oil
  • 2 ¼ Cups of Sugar
  • 3 Tsp. of Vanilla
  • 2 Cups of Grated Zucchini
  • 1 Cup of Chopped Walnuts

  1. Grease and flour your pans. Preheat the oven to 325 degrees
  2. Mix dry ingredients
  3. Beat wet ingredients
  4. Add dry ingredients to creamed wet ingredients and beat well
  5. Stir in zucchini and nuts
  6. Bake for 40 – 55 minutes (until fork comes out dryish)
  7. Cool on a rack and enjoy!
